Recipes anyone???

Once again, I am borrowing an idea from my friend Laura Beth.....:) Thanks LB!

I have been stumped lately on what to cook for dinner or any meal as a matter of fact!! I would love to hear recipes that you all find to be easy and your family enjoys...please leave me a comment and let's see how many good ideas we can come up with!!! :)

You see my friend, the reason you are stumped is because of a lovely thing called pregnancy brain. Once Sadie is born, the name changes to mommy brain. It also gets worse with each child, and I have heard one of the reasons is because brain cells escape through breast milk. ;)
So, while this can be unfortunate to not be able to think clearly for many years to come, you can also use it to your advantage! "I am so sorry I forgot, I have mommy brain"

Just make sure you keep some boneless, skinless, chicken tenderloins in your freezer. You can pull them out and marinade them in just about any sauce and it will see like a different meal than you had the night before. Or cut them up and through them in a casserole (unless your hubby is like mine and doesn't like casseroles!)

Erica is right! There's actually a name for it, PDD (Pregnancy Dumbing Disorder)...truly, I read it in an actual medical book! And yes, it does get worse with subsequent children! The good news is it gets better with sleep and your husband experiencing a vasectomy! :) Anyway, good and easy---
Get a can of white chicken, drain the juice and break up the big pieces. Mix together one can of Cream of Chicken soup, 8 oz. Sour Cream and the chicken. Spread in a small casserole dish. Melt a stick of butter and crush one sleeve of Ritz crackers into it (if you're in a pinch, Club crackers work as well as Cheez-its...can you tell I have 2 pre-schoolers!). Put the Ritz / butter mixture over the chicken mixture. If you want to, you can sprinkle some Poppy Seeds on it, but not necessary. Bake at 350 for half an hour. Voila! Excellent supper your hubby will thank you for...it really only takes about 2 minutes to put it together, but tastes like you slaved!

If you are craving Chinese, I recommend the following.

Fried Rice
2 cups minute rice prepared/cooled
2 eggs
2 tablespoons oil
1 teaspoon minced garlic
1 small onion, minced or chopped
1 cup carrots
1 cup peas
soy sauce
beef, chicken, shrimp (you choose!)

Heat the oil in a large skillet over high heat.

Add the garlic and onion and cook, stirring constantly, for 1 minute.

Reduce the heat to medium, and add the carrots, peas, rice and meat; cook, stirring, for about 5 minutes.

Use your stirring spoon to make a well in the center of the rice and pour the eggs into it. Let the eggs cook for 1 minute, then slowly start to stir and incorporate the egg into the rice.

Add the soy sauce and cook for 2 minutes longer, stirring and tossing with the spoon.

I get the little salad shrimps from the Walmart deli and cook those in. You can also buy the small boxes of General Tso's chicken, Honey Chicken, etc. Slice up leftover steak or left over chicken and toss that in. This is so easy and quick! You can get the little peas and carrots already together also. You can add more ingredients or leave out what you don't like.

Here is one of my fav's...sounds a little strange, but it is wonderful!!

Mom's Taco Salad

2 ripe tomatoes, diced
1/2 pound sharp Cheddar, Shredded
1 large onion, diced
1 head iceberg lettuce, washed, drained and shredded
1 pound lean ground beef, browned, crumbled and drained
1 cup Italian salad dressing--use the Fat Free if you would like to feel better about your self!
1 (7-ounce) bag Dorito's chips, crushed
1 cup salsa

For Cooking the Meat:
1 Taco Seasoning Packet
1 Can Black Beans-omit if you do not like them!
1/2 tsp of Cumin-You can omit this or add more if you like--we add more!
If you like things spicy-add several dashes of hot sauce


Brown and crumble ground beef. Drain. Follow directions on Taco Seasoning packet plus add in any extra spices (ie cumin, hot sauce) and drained can of black beans. Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Add the salad dressing and mix well. Just before serving, add the Doritos, tossing to combine with other ingredients. Top each serving with salsa or sour cream or both!

okay, I will be back by with a recipe because I LOVE sharing recipes, but first I just wanted to tell you that I am thinking about you during these last few days/weeks. I will be praying for you during those first few weeks after Sadie is born. They are an exciting time, but...what's the word...hard time? Sleepless time? out of control time? But I know you will be great!! Just be encouraged that everyone who has a child has been there!!

Here are a couple of recipes that have helped me get my "fish" in this pregnancy. I'm sure you'll laugh at the first, but that's okay. It's easy and that's what it takes sometimes :-)

Tuna Pasta Salad

Boil some elbow macaroni (or whatever kind of pasta you have available)
Add mayo and pickle relish to one or two cans of tuna (just be sure it's the light white tuna since you're pregnant :-); we get the kind that's in water since it's better for you)
You can also add a couple of boiled eggs if you want
Add the tuna mixture to the pasta
Enjoy on some crackers or straight from a bowl

Then there's this DELICIOUS Lemon Tilapia recipe from Weight Watchers. Just click on the link below. We often enjoy it with some rice and a nice green veggie. YUM.

Maggies Dinner

1lb ground beef
1lbs deans mild sausage
1 yellow onion
1 green pepper
1 can tomato soup
1 large jar prego traditional spaghetti sauce
1T italian seasoning
shredded mozzerella
1 - 1 1/2 bags egg noodles

Preheat oven to 350

Cook noodles according to package.
Brown ground beef and sausage together with finely chopped onion and green pepper. drain fat. Add back to pot and stir in sauce, soup, and seasoning. pour in noodles and mix well.
Put mixture in 9 x 13 baking dish. Bake 20-25 minutes (until hot and bubbly). Add mozzerella to cover top. Bake uncovered another 10 minutes until cheese is melted.

Serve with salad and garlic bread!

hey girl... i have a great recipe for you that is super simple:

salt and pepper a package of boneless/skinless chicken breasts. amount doesn't matter. place in crock pot, cover with water. cook on low all day (about 6-8 hours). drain water, shredd chicken and cover with your favorite bbq sauce. we love sonny's. it's our favorite! eat alone or on a bun and add your favorite sides. i haven't met one person who doesn't like this one. enjoy!!
